I remember getting the call from Fred Carl. He asked if I would like to be lead industrial designer, working with Eric Deng's just forming Viking Commercial R&D team and him, to design a state-of-the-art commercial cooking product line from the ground up. We had a clean slate, and the product line was to be the most beautiful and high performance solution in the world, combining the best of European and American cooking equipment ideas and cuisine trends. Obviously I was enthusiastic! Our rigorous research with prominent chefs and the staff of The Culinary Institute of America was the essential first step, where we discovered many problems and some important unfulfilled needs in existing European and American commercial cooking equipment. During the fast track development process we focused on innovation in those areas. Our team winning a 2009 National Restaurant Association "KI" Kitchen Innovations Award was very gratifying.
